Chocolate Layer Cake With Coconut Frosting
Ingredients
- 1 cup butter
- 2 cups sugar
- 1 cup milk
- 2 1/2 cups flour
- 5 eggs
- 2 teaspoons baking powder
- 1 cake Baker's chocolate (approx. 4 oz)
- 1 teaspoon vanilla extract
- 1 pound powdered sugar
- 3 eggs
- 1/2 cake Baker's chocolate (approx. 2 oz)
- 1 cup shredded coconut
Method
- 1 Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
- 2 Cream butter and sugar until light. Beat in eggs one at a time, then milk.
- 3 Sift flour and baking powder; fold into wet ingredients. Grate chocolate and fold in.
- 4 Pour batter into pans and bake for 25-30 minutes until a toothpick comes out clean.
- 5 For filling, cook sugar, eggs, and chocolate over double boiler until thick. Cool.
- 6 Spread filling between layers, then cover top and sides with shredded coconut.
