Chocolate Layer Cake With Coconut Frosting

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 1 cup milk
  • 2 1/2 cups flour
  • 5 eggs
  • 2 teaspoons baking powder
  • 1 cake Baker's chocolate (approx. 4 oz)
  • 1 teaspoon vanilla extract
  • 1 pound powdered sugar
  • 3 eggs
  • 1/2 cake Baker's chocolate (approx. 2 oz)
  • 1 cup shredded coconut

Method

  1. 1 Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. 2 Cream butter and sugar until light. Beat in eggs one at a time, then milk.
  3. 3 Sift flour and baking powder; fold into wet ingredients. Grate chocolate and fold in.
  4. 4 Pour batter into pans and bake for 25-30 minutes until a toothpick comes out clean.
  5. 5 For filling, cook sugar, eggs, and chocolate over double boiler until thick. Cool.
  6. 6 Spread filling between layers, then cover top and sides with shredded coconut.
