Chocolate Glazed Vanilla Cream Puffs

Ingredients

  • ½ cup water
  • 2 oz butter
  • 1 oz sugar
  • 2.5 oz finely sifted flour
  • 2 eggs
  • Whipped cream, vanilla or jam for filling
  • Chocolate icing for glazing

Method

  1. 1 In a saucepan, bring water, butter, and sugar to a boil. Add flour gradually and stir until the mixture is stiff.
  2. 2 Remove from heat, stir a bit more, then add eggs one at a time, beating well after each. Let cool slightly.
  3. 3 Butter a baking sheet and drop paste in plum-sized rounds. Bake in a 350°F oven for 20 minutes.
  4. 4 Cool pastries, cut a small incision in the side, and fill with vanilla whipped cream or jam.
  5. 5 Glaze each chou lightly with chocolate icing just before serving.
