Chocolate Gingerbread Cake

Ingredients

  • 1 cup molasses
  • 1/2 cup sour milk or cream
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp cold water
  • 2 tbsp melted butter
  • 2 cups sifted all-purpose flour
  • 2 oz chocolate, melted
  • 1 tbsp butter, melted

Method

  1. 1 In a large bowl, mix molasses, sour milk or cream, ginger, cinnamon, and salt.
  2. 2 Dissolve baking soda in cold water, then add to the bowl along with 2 tbsp melted butter.
  3. 3 Stir in sifted flour until combined. Mix chocolate and 1 tbsp butter together, then fold into the batter.
  4. 4 Pour into three well-buttered deep tin plates or cake pans.
  5. 5 Bake in a moderately hot oven (425°F) for about 20 minutes.
