Chocolate Dipped Meringue Truffles
Ingredients
- 2 egg whites
- 2 cups confectioners' sugar
- ½ tsp vanilla extract
- 5 oz semi-sweet chocolate, chopped
Method
- 1 Beat egg whites to stiff peaks. Gradually beat in sugar and vanilla until well combined.
- 2 Roll mixture into small balls and place on a buttered platter. Let stand for at least one hour.
- 3 Melt chocolate using a double boiler (bowl over simmering water). Dip each cream ball into chocolate.
- 4 Remove with a fork and place on a buttered dish. Allow chocolate to harden for 30 minutes.
