Chocolate Dipped Meringue Truffles

Ingredients

  • 2 egg whites
  • 2 cups confectioners' sugar
  • ½ tsp vanilla extract
  • 5 oz semi-sweet chocolate, chopped

Method

  1. 1 Beat egg whites to stiff peaks. Gradually beat in sugar and vanilla until well combined.
  2. 2 Roll mixture into small balls and place on a buttered platter. Let stand for at least one hour.
  3. 3 Melt chocolate using a double boiler (bowl over simmering water). Dip each cream ball into chocolate.
  4. 4 Remove with a fork and place on a buttered dish. Allow chocolate to harden for 30 minutes.
