Chocolate Dipped Fruit And Nut Truffles
Ingredients
- ½ cup Sultana raisins
- 5 figs
- 1 cup dates
- 2 ounces citron
- 2/3 cup nut meats (almonds, filberts, pecans, or walnuts)
- 1½ ounces Baker's Chocolate
- 1/3 cup confectioner's sugar
- ¼ teaspoon salt
- Chocolate Fondant or Baker's Dot Chocolate for dipping
- Confectioner's sugar for rolling
- Fine-chopped pistachio nut meats for garnish
Method
- 1 Pour boiling water over the figs and dates, let boil once, then drain thoroughly.
- 2 Remove stones from dates and stems from figs; chop fruit and nut meats in a food chopper.
- 3 Add salt, sugar, and melted chocolate to the chopped mixture; work until smooth.
- 4 Add more sugar if needed, then roll the mixture into a ¼-inch thick sheet.
- 5 Cut into 1-inch wide strips, then into diamond or square pieces.
- 6 Roll in confectioner's sugar or dip in chocolate; sprinkle with chopped pistachios.
