Chocolate Dipped Coconut Balls
Ingredients
- 2 cups confectioners' sugar
- 1 cup grated coconut
- 1 tablespoon vanilla extract
- 1 pinch salt
- 3 egg whites, beaten stiff
- 1/2 ounce baking chocolate, grated
- 2 tablespoons butter
Method
- 1 Mix sugar, coconut, vanilla, salt, and stiffly beaten egg whites. Roll into small balls.
- 2 Let balls stand for 30 minutes.
- 3 Melt butter and mix with grated chocolate. Let cool slightly.
- 4 Dip balls into chocolate mixture and place on a buttered plate to harden.
