Chocolate Date And Pecan Loaf Cake

Ingredients

  • 1 cup boiling water
  • 1 lb stoned and chopped dates
  • ¾ cup brown sugar
  • 2 tablespoons shortening
  • 1 ounce melted chocolate
  • 1 egg, well beaten
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1¾ cups flour
  • ¾ cup chopped pecan nuts

Method

  1. 1 Pour boiling water over the dates and set aside.
  2. 2 Cream the sugar and shortening together. Mix in the melted chocolate and beaten egg.
  3. 3 Sift together the baking powder, salt, and flour. Add the date mixture, dry ingredients, and pecans to the creamed mixture. Mix well.
  4. 4 Pour batter into a greased loaf pan. Bake in a slow oven (300°F) for one and a half hours.
