Chocolate Date And Pecan Loaf Cake
Ingredients
- 1 cup boiling water
- 1 lb stoned and chopped dates
- ¾ cup brown sugar
- 2 tablespoons shortening
- 1 ounce melted chocolate
- 1 egg, well beaten
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1¾ cups flour
- ¾ cup chopped pecan nuts
Method
- 1 Pour boiling water over the dates and set aside.
- 2 Cream the sugar and shortening together. Mix in the melted chocolate and beaten egg.
- 3 Sift together the baking powder, salt, and flour. Add the date mixture, dry ingredients, and pecans to the creamed mixture. Mix well.
- 4 Pour batter into a greased loaf pan. Bake in a slow oven (300°F) for one and a half hours.
