Chocolate Custards With Meringue

Ingredients

  • 8 oz best chocolate, cut into pieces
  • 1 cup milk (for boiling chocolate)
  • 1 pint boiling milk or cream
  • 8 egg yolks
  • 2 egg whites
  • 2 oz loaf sugar (approx. 1 cup)
  • 6 egg whites
  • 1 tsp sugar (for egg whites)
  • Chocolate nuts (bonbons), optional

Method

  1. 1 Place chocolate pieces in a saucepan. Pour on just enough milk to prevent burning and boil for 10 minutes.
  2. 2 Remove from heat. Stir in 1 pint of boiling milk or cream and 2 oz of sugar until dissolved.
  3. 3 Beat 8 egg yolks and 2 egg whites together. Stir this mixture into the warm chocolate base.
  4. 4 Pour into cups and place in a baking dish filled with water. Bake in a moderate oven (350°F) until set.
  5. 5 Beat the remaining 6 egg whites with a little sugar to stiff peaks. Heap meringue on each custard.
  6. 6 Top each meringue heap with a chocolate nut bonbon if desired. Serve immediately.
