Chocolate Custards With Meringue
Ingredients
- 8 oz best chocolate, cut into pieces
- 1 cup milk (for boiling chocolate)
- 1 pint boiling milk or cream
- 8 egg yolks
- 2 egg whites
- 2 oz loaf sugar (approx. 1 cup)
- 6 egg whites
- 1 tsp sugar (for egg whites)
- Chocolate nuts (bonbons), optional
Method
- 1 Place chocolate pieces in a saucepan. Pour on just enough milk to prevent burning and boil for 10 minutes.
- 2 Remove from heat. Stir in 1 pint of boiling milk or cream and 2 oz of sugar until dissolved.
- 3 Beat 8 egg yolks and 2 egg whites together. Stir this mixture into the warm chocolate base.
- 4 Pour into cups and place in a baking dish filled with water. Bake in a moderate oven (350°F) until set.
- 5 Beat the remaining 6 egg whites with a little sugar to stiff peaks. Heap meringue on each custard.
- 6 Top each meringue heap with a chocolate nut bonbon if desired. Serve immediately.
