Chocolate Custard Ice Cream Folded With Cream

Ingredients

  • 1 pint milk
  • 1 ¼ squares chocolate
  • ¾ cup sugar
  • 1 egg yolk
  • Few grains salt
  • ½ cup heavy cream, beaten stiff
  • ½ tablespoon vanilla

Method

  1. 1 Place milk and chocolate in a double boiler over heat.
  2. 2 Scald the milk and melt the chocolate, then pour gradually into a bowl containing sugar, egg yolk, and salt, mixing well.
  3. 3 Return the mixture to the double boiler and cook, stirring constantly, for 1 minute.
  4. 4 Chill the mixture thoroughly, then fold in the beaten cream and vanilla.
  5. 5 Freeze using an ice cream maker with a ratio of three parts ice to one part salt.
