Chocolate Custard Ice Cream Folded With Cream
Ingredients
- 1 pint milk
- 1 ¼ squares chocolate
- ¾ cup sugar
- 1 egg yolk
- Few grains salt
- ½ cup heavy cream, beaten stiff
- ½ tablespoon vanilla
Method
- 1 Place milk and chocolate in a double boiler over heat.
- 2 Scald the milk and melt the chocolate, then pour gradually into a bowl containing sugar, egg yolk, and salt, mixing well.
- 3 Return the mixture to the double boiler and cook, stirring constantly, for 1 minute.
- 4 Chill the mixture thoroughly, then fold in the beaten cream and vanilla.
- 5 Freeze using an ice cream maker with a ratio of three parts ice to one part salt.
