Chocolate Covered Maple Fondant Acorns

Ingredients

  • 2 cups maple syrup
  • 1 ¾ cups granulated sugar
  • ¾ cup cold water
  • Confectioners' sugar (as needed)
  • 2 or more squares Baker's Chocolate
  • 1 teaspoon vanilla
  • ¼ cup fine-chopped almonds, browned in the oven

Method

  1. 1 Combine maple syrup, granulated sugar, and cold water in a saucepan.
  2. 2 Cook the mixture to make fondant, following standard fondant directions without cream of tartar.
  3. 3 Work some fondant with confectioners' sugar into cone shapes and let harden for an hour.
  4. 4 Melt chocolate and vanilla over hot water, stirring until smooth.
  5. 5 Dip the fondant cones in the chocolate mixture and place on waxed paper.
  6. 6 Dip the base of each cone in chocolate again, then roll in browned almonds.
