Chocolate Coffee Cake With Raisins And Citron
Ingredients
- 1 cup sugar
- 3/4 teaspoon salt
- 1/4 cup grated chocolate
- 3/4 cup shortening
- 5 eggs, separated
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup sultana raisins
- 1/2 cup chopped candied citron peel
- 2 tablespoons shortening (for frosting)
- 2 squares bitter chocolate, melted
- 2 cups powdered sugar
- 6 tablespoons coffee
- 1/4 teaspoon salt (for frosting)
- 1/2 teaspoon vanilla extract
Method
- 1 Preheat oven to 350°F. Grease and flour a cake pan.
- 2 Cream shortening and sugar; beat in egg yolks one at a time.
- 3 Mix in flour, salt, baking powder, grated chocolate, raisins, and citron.
- 4 Fold in stiffly beaten egg whites until combined.
- 5 Pour into prepared pan and bake for 1 hour 15 minutes.
- 6 For frosting, cream shortening with powdered sugar, salt, and vanilla.
- 7 Stir in melted chocolate and coffee until thick and smooth.
- 8 Let frosting cool slightly, then spread over completely cooled cake.
