Chocolate Coated Almond Nougat

Ingredients

  • 1 cup granulated sugar
  • ½ cup glucose
  • ½ cup strained honey
  • Pea-sized piece of paraffin
  • ¼ cup water
  • ¼ teaspoon salt
  • 2 egg whites, beaten dry
  • 1 cup chopped almond or English walnut meats
  • 1 teaspoon vanilla
  • ½ pound Baker's Dot Chocolate

Method

  1. 1 Combine sugar, glucose, honey, paraffin, and water in a saucepan. Stir occasionally and boil to the hard ball stage (248°F).
  2. 2 Add salt to egg whites and beat. Gradually pour in part of the hot syrup while beating constantly with an egg beater.
  3. 3 Return remaining syrup to heat and boil until brittle in cold water (290°F). Pour this gradually onto the egg mixture, beating constantly.
  4. 4 Return mixture to saucepan over low heat and beat constantly until crisp in cold water. Stir in nuts and vanilla.
  5. 5 Pour into a buttered pan slightly larger than a bread pan. Cool until firm, then cut into 1¼ x 3/8 inch pieces.
  6. 6 Melt the chocolate and coat the nougatine pieces. Let set.
