Chocolate Centered Fondant Bonbons
Ingredients
- 2 ½ cups sugar
- ½ cup water
- ¼ cup glucose
- ¼ cup butter
- 2 ½ oz Baker's Premium Chocolate
- 2 teaspoons vanilla
- ½ lb Baker's Dot Chocolate
Method
- 1 Combine sugar, water, glucose, and butter in a saucepan. Heat and stir until sugar melts, then cook to the soft-ball stage (236°F).
- 2 Pour the syrup onto a damp marble and let cool completely. Stir in the melted Premium Chocolate until creamy.
- 3 Cover the fondant and let stand for 30 minutes. Knead well, then warm gently in a double boiler with vanilla until smooth.
- 4 Drop small amounts of the mixture into starch molds to set. Once firm, brush off the starch.
- 5 Dip the centers into melted Dot Chocolate and allow to harden.
