Chocolate Centered Fondant Bonbons

Ingredients

  • 2 ½ cups sugar
  • ½ cup water
  • ¼ cup glucose
  • ¼ cup butter
  • 2 ½ oz Baker's Premium Chocolate
  • 2 teaspoons vanilla
  • ½ lb Baker's Dot Chocolate

Method

  1. 1 Combine sugar, water, glucose, and butter in a saucepan. Heat and stir until sugar melts, then cook to the soft-ball stage (236°F).
  2. 2 Pour the syrup onto a damp marble and let cool completely. Stir in the melted Premium Chocolate until creamy.
  3. 3 Cover the fondant and let stand for 30 minutes. Knead well, then warm gently in a double boiler with vanilla until smooth.
  4. 4 Drop small amounts of the mixture into starch molds to set. Once firm, brush off the starch.
  5. 5 Dip the centers into melted Dot Chocolate and allow to harden.
