Chocolate Caramels
Ingredients
- 2 ½ cups sugar
- ¾ cup glucose (pure corn syrup)
- ½ cup butter
- 1/8 teaspoon cream of tartar
- 2 ½ cups whole milk
- 2 ½ squares Baker's Chocolate
- 1 teaspoon vanilla extract
Method
- 1 Combine sugar, glucose, butter, cream of tartar, and 1 cup milk in a pot. Stir constantly over heat.
- 2 When boiling, gradually stir in the remaining milk. Keep the mixture boiling during addition.
- 3 Stir occasionally and cook until the mixture reaches 248°F (hard ball stage in cold water).
- 4 Remove from heat, add chocolate and vanilla, and beat thoroughly until smooth.
- 5 Pour into two pans. When nearly cold, cut into squares.
