Chocolate Caramel Candy

Ingredients

  • 8 lbs sugar
  • ½ lb unsweetened chocolate
  • 2 lbs glucose
  • 1 lb fresh butter
  • Vanilla flavoring
  • 2 pints water
  • 2 tins condensed milk

Method

  1. 1 Boil sugar, glucose, and water to the soft-ball stage (250°F).
  2. 2 Dissolve and incorporate the milk, butter, and chocolate into the mixture.
  3. 3 Bring the mixture gently through a boil.
  4. 4 Pour onto an oiled slab or into frames to set.
  5. 5 Once set, mark deeply with a caramel cutter.
  6. 6 When cold, separate pieces with a sharp knife and wrap in wax paper.
