Chocolate Caramel Candy
Ingredients
- 8 lbs sugar
- ½ lb unsweetened chocolate
- 2 lbs glucose
- 1 lb fresh butter
- Vanilla flavoring
- 2 pints water
- 2 tins condensed milk
Method
- 1 Boil sugar, glucose, and water to the soft-ball stage (250°F).
- 2 Dissolve and incorporate the milk, butter, and chocolate into the mixture.
- 3 Bring the mixture gently through a boil.
- 4 Pour onto an oiled slab or into frames to set.
- 5 Once set, mark deeply with a caramel cutter.
- 6 When cold, separate pieces with a sharp knife and wrap in wax paper.
