Chocolate Cake With Lemon Icing
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 egg yolks
- 1 1/2 cups flour
- 1 tsp baking powder
- 2 tsp cocoa
- 1/2 cup milk
- 2 egg whites
- 1 tsp vanilla or lemon extract
- 1/2 tsp cocoa (for icing)
- 1 cup powdered sugar
- 1 tbsp lemon juice
- 1 tbsp boiling water
Method
- 1 Preheat oven to 350°F. Cream butter and sugar, then beat in egg yolks.
- 2 Sift together flour, baking powder, and 2 tsp cocoa.
- 3 Beat egg whites stiff. Alternately add milk and flour mixture to the butter mixture.
- 4 Fold in egg whites and vanilla. Bake in a shallow pan for 20 minutes.
- 5 Mix icing ingredients (1/2 tsp cocoa, 1 cup powdered sugar, 1 tbsp lemon juice, 1 tbsp boiling water) into a paste.
- 6 Spread icing immediately over the hot cake.
