Chocolate Cake With Lemon Icing

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 egg yolks
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 2 tsp cocoa
  • 1/2 cup milk
  • 2 egg whites
  • 1 tsp vanilla or lemon extract
  • 1/2 tsp cocoa (for icing)
  • 1 cup powdered sugar
  • 1 tbsp lemon juice
  • 1 tbsp boiling water

Method

  1. 1 Preheat oven to 350°F. Cream butter and sugar, then beat in egg yolks.
  2. 2 Sift together flour, baking powder, and 2 tsp cocoa.
  3. 3 Beat egg whites stiff. Alternately add milk and flour mixture to the butter mixture.
  4. 4 Fold in egg whites and vanilla. Bake in a shallow pan for 20 minutes.
  5. 5 Mix icing ingredients (1/2 tsp cocoa, 1 cup powdered sugar, 1 tbsp lemon juice, 1 tbsp boiling water) into a paste.
  6. 6 Spread icing immediately over the hot cake.
