Chocolate Cake With Italian Meringue Frosting

Ingredients

  • 1/2 cup butter
  • 2 cups sugar
  • 3 whole eggs
  • 1 cup milk
  • 3 cups flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 2 egg whites (unbeaten)
  • 1 1/2 cups powdered sugar
  • 2 oz unsweetened chocolate, grated
  • 1/2 cup powdered sugar
  • 4 tbsp boiling water

Method

  1. 1 Beat butter and sugar until creamy.
  2. 2 Add eggs beaten together and mix well.
  3. 3 Sift cream of tartar and soda into flour.
  4. 4 Add flour and milk alternately to the batter.
  5. 5 Bake in four or five layers.
  6. 6 Beat egg whites and 1 1/2 cups powdered sugar together.
  7. 7 Heat chocolate, 1/2 cup sugar, and boiling water until smooth.
  8. 8 Stir hot chocolate mixture into egg mixture.
  9. 9 Spread icing on cake layers and sides.
  10. 10 Set cake in oven briefly to dry the icing.
