Chocolate Cake With Italian Meringue Frosting
Ingredients
- 1/2 cup butter
- 2 cups sugar
- 3 whole eggs
- 1 cup milk
- 3 cups flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 2 egg whites (unbeaten)
- 1 1/2 cups powdered sugar
- 2 oz unsweetened chocolate, grated
- 1/2 cup powdered sugar
- 4 tbsp boiling water
Method
- 1 Beat butter and sugar until creamy.
- 2 Add eggs beaten together and mix well.
- 3 Sift cream of tartar and soda into flour.
- 4 Add flour and milk alternately to the batter.
- 5 Bake in four or five layers.
- 6 Beat egg whites and 1 1/2 cups powdered sugar together.
- 7 Heat chocolate, 1/2 cup sugar, and boiling water until smooth.
- 8 Stir hot chocolate mixture into egg mixture.
- 9 Spread icing on cake layers and sides.
- 10 Set cake in oven briefly to dry the icing.
