Chocolate Cake With Apple Jelly Meringue
Ingredients
- 1 cup sugar
- 6 tbsp shortening
- 1 egg yolk
- 1 whole egg
- ¾ cup milk
- 2 cups flour
- 3 tsp baking powder
- ½ cup powdered cocoa
- 1 tsp cinnamon
- 1 egg white
- ½ cup apple jelly
- 1 cup powdered sugar
- 2 tbsp cornstarch
Method
- 1 Preheat oven to 350°F.
- 2 Cream sugar and shortening, then add egg yolk, whole egg, and milk.
- 3 Mix in flour, baking powder, cocoa, and cinnamon until combined.
- 4 Divide batter into two layers and bake for 25 minutes.
- 5 Beat egg white and apple jelly into a stiff meringue for filling.
- 6 Boil powdered sugar and cornstarch with water to make a smooth icing, then spread on cake.
