Chocolate Bavarian Cream
Ingredients
- 1 package gelatin
- ½ cup milk
- 2 quarts heavy cream, whipped
- ½ cup sugar, divided
- 2.5 oz bittersweet chocolate, grated
- 1 tbsp hot water
- Whipped cream, for serving
Method
- 1 Soak gelatin in cold water for 2 hours.
- 2 Whip and drain the heavy cream.
- 3 Grate the chocolate and bring milk to a boil.
- 4 Melt chocolate with 2 tbsp sugar and 1 tbsp hot water over heat until smooth.
- 5 Stir chocolate mixture into hot milk, then add soaked gelatin and remaining sugar.
- 6 Strain mixture into a large bowl set in ice water; stir until thickened.
- 7 Fold in whipped cream gradually.
- 8 Dip mold in cold water, fill with cream, and chill for 1 hour or more.
- 9 Dip mold in tepid water to release onto a plate; serve with extra whipped cream.
