  • 1/2 lb ground sweet almonds
  • 7 oz castor sugar
  • 1 oz cocoa powder
  • 8 eggs, separated
  • 2 tsp vanilla extract

Method

  1. 1 Whip the egg yolks in a bowl until well combined.
  2. 2 Add vanilla extract, sugar, ground almonds, and cocoa, beating continuously.
  3. 3 Gently fold in the stiffly beaten egg whites.
  4. 4 Pour into greased pie dishes, filling only partway.
  5. 5 Bake in a moderate oven (350°F) until set, similar to standard almond pudding.
