- 1 Prepare a custard by whisking rich milk, egg yolks, sugar, and vanilla. Add cream if using.
- 2 Grate high-quality chocolate finely and rub through a sieve to create a fine powder.
- 3 Stir the chocolate powder into the custard mixture, stirring constantly in one direction to avoid air bubbles.
- 4 Pour the mixture into serving dishes and let it set until it reaches a thick, rich cream consistency.
- 5 Sprinkle the tops with chopped almonds before serving.
