Chocolate Almond Brown Bread Pudding
Ingredients
- 4 egg yolks
- 3 whole eggs
- 6.5 oz sugar
- 6.5 oz almonds, blanched and finely chopped
- 1 dash cinnamon
- 1 tbsp chocolate, grated
- 4 tbsp citron, finely chopped
- 8.5 oz brown bread, grated and soaked in claret or milk
- Butter and bread crumbs for greasing mold
Method
- 1 Beat 4 egg yolks, 3 whole eggs, and 6.5 oz sugar together for 15 minutes.
- 2 Mix in chopped almonds, cinnamon, grated chocolate, and chopped citron.
- 3 Stir in brown bread that has been grated and soaked in a few spoonfuls of claret or milk.
- 4 Butter a mold, sprinkle with bread crumbs, and pour in the mixture.
- 5 Place the mold in a pan of hot water and bake in a moderate oven (350°F) for 45 minutes.
- 6 Serve warm with your preferred sauce.
