Chocolate Almond Brown Bread Pudding

Ingredients

  • 4 egg yolks
  • 3 whole eggs
  • 6.5 oz sugar
  • 6.5 oz almonds, blanched and finely chopped
  • 1 dash cinnamon
  • 1 tbsp chocolate, grated
  • 4 tbsp citron, finely chopped
  • 8.5 oz brown bread, grated and soaked in claret or milk
  • Butter and bread crumbs for greasing mold

Method

  1. 1 Beat 4 egg yolks, 3 whole eggs, and 6.5 oz sugar together for 15 minutes.
  2. 2 Mix in chopped almonds, cinnamon, grated chocolate, and chopped citron.
  3. 3 Stir in brown bread that has been grated and soaked in a few spoonfuls of claret or milk.
  4. 4 Butter a mold, sprinkle with bread crumbs, and pour in the mixture.
  5. 5 Place the mold in a pan of hot water and bake in a moderate oven (350°F) for 45 minutes.
  6. 6 Serve warm with your preferred sauce.
