Chocolate Almond Bonbons
Ingredients
- 1/4 cup blanched almonds, chopped fine
- 1/2 cup fondant
- 1/4 teaspoon vanilla extract
- Confectioners' sugar, for kneading and shaping
- 1 cup fondant, for coating
- 2 squares Baker's chocolate
- 1 teaspoon vanilla extract
- Few drops water, as needed
- Blanched almond halves, for garnish
Method
- 1 Mix chopped almonds with 1/2 cup fondant and 1/4 teaspoon vanilla.
- 2 Add confectioners' sugar gradually and knead thoroughly on a marble or platter.
- 3 Shape the mixture into a long roll, cut into small pieces, and form into 1/2-inch balls.
- 4 Place balls on waxed paper and let harden on the outside for about one hour.
- 5 Melt 1 cup fondant, 2 squares of chocolate, 1 teaspoon vanilla, and a few drops of water in a double boiler.
- 6 Dip each hardened center into the chocolate mixture using a wire fork, scraping off excess.
- 7 Place coated bonbons on waxed paper and immediately press an almond half on top.
