Chocolate Almond Bonbons

Ingredients

  • 1/4 cup blanched almonds, chopped fine
  • 1/2 cup fondant
  • 1/4 teaspoon vanilla extract
  • Confectioners' sugar, for kneading and shaping
  • 1 cup fondant, for coating
  • 2 squares Baker's chocolate
  • 1 teaspoon vanilla extract
  • Few drops water, as needed
  • Blanched almond halves, for garnish

Method

  1. 1 Mix chopped almonds with 1/2 cup fondant and 1/4 teaspoon vanilla.
  2. 2 Add confectioners' sugar gradually and knead thoroughly on a marble or platter.
  3. 3 Shape the mixture into a long roll, cut into small pieces, and form into 1/2-inch balls.
  4. 4 Place balls on waxed paper and let harden on the outside for about one hour.
  5. 5 Melt 1 cup fondant, 2 squares of chocolate, 1 teaspoon vanilla, and a few drops of water in a double boiler.
  6. 6 Dip each hardened center into the chocolate mixture using a wire fork, scraping off excess.
  7. 7 Place coated bonbons on waxed paper and immediately press an almond half on top.
