Chilled Whipped Apple Mousse
Ingredients
- 2-3 cooking apples
- 1 tbsp butter
- 1 tsp lemon juice
- Sugar to taste
- Spice or wine to season
- 2-3 egg whites
Method
- 1 Peel and cook apples until soft, then rub through a sieve.
- 2 Sweeten to taste and stir in butter, lemon juice, and spice or wine.
- 3 Stiffly beat egg whites and gently fold them into the apple mixture.
- 4 Chill thoroughly and serve very cold.
