Chilled Watermelon Cucumber Gazpacho

Ingredients

  • 2 cups cubed, seeded watermelon (divided)
  • 1 cucumber, peeled, coarsely chopped (divided)
  • 2 cloves garlic, minced
  • 2 tablespoons chopped onion
  • 1 teaspoon lime juice
  • 1 tablespoon olive oil
  • 1/8 teaspoon chopped fresh basil
  • 1/2 teaspoon ground black pepper
  • 1 jalapeño pepper, seeded and chopped (optional)

Method

  1. 1 In a small bowl, mix 1 cup of cubed watermelon and half of the chopped cucumber; set aside.
  2. 2 Process the remaining watermelon, cucumber, garlic, onion, lime juice, olive oil, basil, pepper, and jalapeño in a food processor or blender until puréed.
  3. 3 Transfer the purée to a large bowl and stir in the reserved watermelon and cucumber mixture.
  4. 4 Refrigerate until ready to serve.
