Chilled Sour Cherry Soup

Ingredients

  • 4 cups sour cherries
  • 1 quart cold water
  • ½ cup sugar
  • 1 tbsp arrowroot
  • 1 tbsp cold water
  • juice of ½ lemon
  • cracked ice

Method

  1. 1 Stone 4 cups of sour cherries and cover with 1 quart of cold water. Bring to a boil.
  2. 2 Add ½ cup sugar. When cherries are soft, rub through a colander and return to the fire.
  3. 3 Rub 1 tbsp arrowroot smooth with 1 tbsp cold water. Stir into the cherry mixture.
  4. 4 Bring to a boil while stirring until thickened. Remove from heat.
  5. 5 Add the juice of half a lemon. Serve very cold in sherbet cups with cracked ice.
