Chilled Sour Cherry Soup
Ingredients
- 4 cups sour cherries
- 1 quart cold water
- ½ cup sugar
- 1 tbsp arrowroot
- 1 tbsp cold water
- juice of ½ lemon
- cracked ice
Method
- 1 Stone 4 cups of sour cherries and cover with 1 quart of cold water. Bring to a boil.
- 2 Add ½ cup sugar. When cherries are soft, rub through a colander and return to the fire.
- 3 Rub 1 tbsp arrowroot smooth with 1 tbsp cold water. Stir into the cherry mixture.
- 4 Bring to a boil while stirring until thickened. Remove from heat.
- 5 Add the juice of half a lemon. Serve very cold in sherbet cups with cracked ice.
