Chilled Semolina Pudding With Almonds
Ingredients
- 1 ½ cups milk
- 2 oz butter
- 3 oz sugar
- 1.5 oz sweet almonds, blanched and finely chopped
- 2-3 bitter almonds, blanched and finely chopped
- 3 oz semolina or farina
Method
- 1 Bring milk, butter, sugar, and chopped almonds to a boil in a saucepan.
- 2 Gradually stir in semolina and boil, stirring constantly, until the mixture is quite stiff.
- 3 Remove from heat and pour into a mold wetted with cold water.
- 4 Chill until set, then serve cold with fruit sauce or cream.
