Chilled Prune Pudding With Whipped Cream
Ingredients
- ½ lb prunes
- 2 cups cold water
- 1 cup sugar
- 1 inch cinnamon stick
- 1 1/3 cups boiling water
- 1/3 cup cornstarch
- 1 tablespoon lemon juice
- whipped cream for serving
Method
- 1 Wash prunes and soak in 2 cups cold water for 1 hour. Boil until soft, then remove stones.
- 2 Remove meat from stones and add it back to the prunes. Add sugar, cinnamon stick, and 1 1/3 cups boiling water. Simmer for 10 minutes.
- 3 Dilute cornstarch with a small amount of cold water to make a smooth slurry. Stir into the prune mixture and cook for 5 minutes.
- 4 Remove the cinnamon stick. Pour the mixture into a mold, chill until set, and serve with whipped cream.
