Chilled Prune Pudding With Whipped Cream

Ingredients

  • ½ lb prunes
  • 2 cups cold water
  • 1 cup sugar
  • 1 inch cinnamon stick
  • 1 1/3 cups boiling water
  • 1/3 cup cornstarch
  • 1 tablespoon lemon juice
  • whipped cream for serving

Method

  1. 1 Wash prunes and soak in 2 cups cold water for 1 hour. Boil until soft, then remove stones.
  2. 2 Remove meat from stones and add it back to the prunes. Add sugar, cinnamon stick, and 1 1/3 cups boiling water. Simmer for 10 minutes.
  3. 3 Dilute cornstarch with a small amount of cold water to make a smooth slurry. Stir into the prune mixture and cook for 5 minutes.
  4. 4 Remove the cinnamon stick. Pour the mixture into a mold, chill until set, and serve with whipped cream.
