Chilled Pineapple Tapioca Pudding

Ingredients

  • 1/2 pint tapioca
  • 1/2 pint cold water
  • boiling water (for cooking)
  • juice of 1 lemon
  • 1 cup grated pineapple
  • 1 cup sugar
  • 2 egg whites, beaten
  • cream (for serving)

Method

  1. 1 Soak tapioca in 1/2 pint cold water overnight. Drain and cover with boiling water.
  2. 2 Cook tapioca until clear, stirring constantly. Remove from heat.
  3. 3 Stir in lemon juice, grated pineapple, sugar, and beaten egg whites.
  4. 4 Chill and serve cold with cream.
