Chilled Pineapple Tapioca Pudding
Ingredients
- 1/2 pint tapioca
- 1/2 pint cold water
- boiling water (for cooking)
- juice of 1 lemon
- 1 cup grated pineapple
- 1 cup sugar
- 2 egg whites, beaten
- cream (for serving)
Method
- 1 Soak tapioca in 1/2 pint cold water overnight. Drain and cover with boiling water.
- 2 Cook tapioca until clear, stirring constantly. Remove from heat.
- 3 Stir in lemon juice, grated pineapple, sugar, and beaten egg whites.
- 4 Chill and serve cold with cream.
