Chilled Peach Sherbet Soda
Ingredients
- 1 quart peeled and sliced peaches
- 1 pound sugar
- 1 cup water
- Juice of 1 lemon
- ½ cup peach mixture per serving
- 2 tablespoons cream per serving
- ½ cup crushed ice per serving
- Carbonated water per serving
Method
- 1 Combine peaches, sugar, and water in a saucepan. Cook until fruit is soft.
- 2 Rub the cooked fruit through a fine sieve. Stir in lemon juice and let cool.
- 3 To serve, place ½ cup peach mixture in a glass with ½ cup crushed ice.
- 4 Top with 2 tablespoons cream and fill with carbonated water. Serve with straws.
