Chilled Gooseberry Cream

Ingredients

  • 6 oz gooseberries
  • 1/2 cup water
  • Sugar to taste
  • 1 tablespoonful cream

Method

  1. 1 Cook gooseberries in 1/2 cup water until soft enough to pulp.
  2. 2 Add sugar to taste and rub the fruit through a sieve.
  3. 3 Let the mixture cool completely.
  4. 4 Mix the cooled gooseberry pulp with the cream.
  5. 5 Serve with rusks.
