Chilled Endive Tomato And String Bean Salad
Ingredients
- 1 head endive
- 3 tomatoes, peeled, halved, and chilled
- 1 cup cold cooked string beans
- French dressing (tarragon vinegar and a few drops of onion juice)
Method
- 1 Blanch the endive stalks until tender-crisp, then chill.
- 2 Dress the endive, tomatoes, and string beans separately with French dressing containing tarragon vinegar and onion juice.
- 3 Arrange the dressed vegetables on a serving dish and serve immediately.
