Chilled Cucumber, Pea, And Lettuce Soup
Ingredients
- 1 cucumber
- 2 cabbage lettuces
- 1 onion
- small handful of spinach
- a piece of mint
- 1 pint shelled peas
- 2 oz. butter
- 1 quart cold water
- 1/2 pint green peas, previously boiled
Method
- 1 Wash and chop the lettuces, cucumber, and onion. Place them in a stewpan with 1/2 pint of peas, mint, and butter.
- 2 Cover with 1 quart of cold water. Bring to a boil, then simmer gently for 3 hours.
- 3 Strain the liquid and pass the vegetables through a sieve. Return the mixture to the pot.
- 4 Season to taste and stir in the remaining 1/2 pint of previously boiled green peas.
