Chilled Asparagus With Vinaigrette

  • 4 asparagus stalks
  • 4 tablespoons salad oil
  • 2 tablespoons vinegar
  • 0.5 tablespoon grated onion
  • 0.5 tablespoon finely chopped green pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 0.25 teaspoon mustard
  • crisp lettuce leaves for serving

Method

  1. 1 Wash, scrape, and trim the asparagus stalks, removing the pithy ends.
  2. 2 Cook the asparagus in boiling water until tender, then lift, drain well, and place in a serving dish.
  3. 3 Whisk together salad oil, vinegar, grated onion, chopped green pepper, salt, paprika, and mustard.
  4. 4 Chill the vinaigrette on ice, then pour over the asparagus and serve cold on lettuce leaves.
