Chilled Asparagus With Vinaigrette
Ingredients
- 4 asparagus stalks
- 4 tablespoons salad oil
- 2 tablespoons vinegar
- 0.5 tablespoon grated onion
- 0.5 tablespoon finely chopped green pepper
- 1 teaspoon salt
- 1 teaspoon paprika
- 0.25 teaspoon mustard
- crisp lettuce leaves for serving
Method
- 1 Wash, scrape, and trim the asparagus stalks, removing the pithy ends.
- 2 Cook the asparagus in boiling water until tender, then lift, drain well, and place in a serving dish.
- 3 Whisk together salad oil, vinegar, grated onion, chopped green pepper, salt, paprika, and mustard.
- 4 Chill the vinaigrette on ice, then pour over the asparagus and serve cold on lettuce leaves.
