Chickpea And Bulgur Vegetable Pilaf
Ingredients
- 1 medium onion, chopped
- 1 cup broccoli, chopped
- 1 cup carrots, shredded
- 1/3 cup green pepper, chopped
- 1 teaspoon fresh parsley, chopped
- 1 1/2 cups canola oil
- 2 cups dry bulgur
- 1 cup low-sodium chicken broth
- 1 can (15 oz) chickpeas, drained
Method
- 1 Wash and chop the onion, broccoli, carrots, pepper, and parsley.
- 2 Heat oil in a large skillet over medium-high heat. Add onions and cook until soft.
- 3 Add bulgur and stir to coat. Pour in chicken broth and bring to a boil.
- 4 Lower heat, add remaining vegetables and chickpeas. Cook 10 minutes until liquid is absorbed.
- 5 Stir in parsley. Serve warm or cold.
