Chicken With Tarragon Gravy
Ingredients
- 1 whole chicken, cut into pieces
- Salt and pepper to taste
- 1 tablespoon oil
- 1 cup clear stock
- Tarragon stalks
- Tarragon leaves, blanched and chopped
Method
- 1 Season chicken pieces with salt and pepper. Sauté in a saucepan with oil until cooked through.
- 2 Boil tarragon stalks in clear stock for one hour to create a flavored gravy.
- 3 Place the cooked chicken on a hot platter.
- 4 Strain the tarragon stock and pour it over the chicken.
- 5 Garnish with blanched, coarsely chopped tarragon leaves.
