Ingredients

  • 1 whole chicken, cut into pieces
  • Salt and pepper to taste
  • 1 tablespoon oil
  • 1 cup clear stock
  • Tarragon stalks
  • Tarragon leaves, blanched and chopped

Method

  1. 1 Season chicken pieces with salt and pepper. Sauté in a saucepan with oil until cooked through.
  2. 2 Boil tarragon stalks in clear stock for one hour to create a flavored gravy.
  3. 3 Place the cooked chicken on a hot platter.
  4. 4 Strain the tarragon stock and pour it over the chicken.
  5. 5 Garnish with blanched, coarsely chopped tarragon leaves.
