Chicken With Onions Turnips And Mushrooms

Ingredients

  • 1 chicken, cut into joints
  • 3 onions
  • 3 turnips
  • butter
  • salt and pepper
  • 2 tbsp flour
  • 1 cup stock
  • 1/4 cup white wine
  • bouquet of mixed herbs
  • 1/2 lb peeled tomatoes, seeds removed
  • 1/2 lb mushrooms, sliced
  • 1 oz finely chopped parsley

Method

  1. 1 Warm onions and turnips in butter until brown. Add chicken joints and season with salt and pepper.
  2. 2 Sauté over fire for 10 minutes. Stir in flour and cook for 5 minutes.
  3. 3 Add stock, white wine, herb bouquet, and peeled tomatoes. Cook over slow fire for 25 minutes.
  4. 4 Add sliced mushrooms and cook for 10 minutes. Remove herb bouquet.
  5. 5 Season with chopped parsley. Serve chicken in a pyramid with sauce and vegetables poured over.
