Chicken With Onions Turnips And Mushrooms
Ingredients
- 1 chicken, cut into joints
- 3 onions
- 3 turnips
- butter
- salt and pepper
- 2 tbsp flour
- 1 cup stock
- 1/4 cup white wine
- bouquet of mixed herbs
- 1/2 lb peeled tomatoes, seeds removed
- 1/2 lb mushrooms, sliced
- 1 oz finely chopped parsley
Method
- 1 Warm onions and turnips in butter until brown. Add chicken joints and season with salt and pepper.
- 2 Sauté over fire for 10 minutes. Stir in flour and cook for 5 minutes.
- 3 Add stock, white wine, herb bouquet, and peeled tomatoes. Cook over slow fire for 25 minutes.
- 4 Add sliced mushrooms and cook for 10 minutes. Remove herb bouquet.
- 5 Season with chopped parsley. Serve chicken in a pyramid with sauce and vegetables poured over.
