Chicken With Olives And Tomato Puree
Ingredients
- 1 whole chicken, cut into pieces
- 1/2 onion, chopped
- 1 stalk celery
- 1 sprig parsley
- 1 carrot
- 1/4 cup butter
- 1 cup chicken stock
- 4 Spanish olives, chopped
- 4 olives, mashed
- 8 whole olives
- 3 tablespoons tomato puree
Method
- 1 In a large skillet, melt butter over medium heat. Add chopped onion, celery, parsley, and carrot; cook until softened.
- 2 Add chicken pieces to the skillet. Brown on all sides, turning as needed.
- 3 Pour in chicken stock, cover, and simmer until chicken is cooked through.
- 4 Stir in chopped olives, mashed olives, whole olives, and reduced tomato puree. Simmer briefly to combine flavors.
