  • 1 whole chicken, cut into pieces

  • 1 stalk celery
  • 1 sprig parsley
  • 1 carrot
  • 1/4 cup butter
  • 1 cup chicken stock
  • 4 Spanish olives, chopped
  • 4 olives, mashed
  • 8 whole olives
  • 3 tablespoons tomato puree

Method
