Chicken Villerecce With Bacon And Ham

Ingredients

  • 1 whole chicken, cut into quarters
  • 3 oz butter, divided
  • 1 tbsp flour
  • 1/2 cup chicken stock
  • 2 oz bacon, diced
  • 2 oz ham, diced
  • 3 mushrooms, boiled
  • 1 onion, studded with 3 cloves
  • 2 egg yolks
  • 2 tbsp heavy cream
  • 1 lemon, juiced

Method

  1. 1 Place chicken quarters in a saucepan with 3 oz butter and flour. Brown well over heat.
  2. 2 Add stock, bacon, ham, boiled mushrooms, and clove-studded onion. Simmer until chicken is cooked.
  3. 3 Remove chicken. Skim grease from sauce, then strain through a sieve back into the pan.
  4. 4 Whisk egg yolks and cream into the hot sauce. Stir gently to thicken without curdling.
  5. 5 Stir in lemon juice. Pour sauce over the chicken and serve immediately.
