Chicken Villerecce With Bacon And Ham
Ingredients
- 1 whole chicken, cut into quarters
- 3 oz butter, divided
- 1 tbsp flour
- 1/2 cup chicken stock
- 2 oz bacon, diced
- 2 oz ham, diced
- 3 mushrooms, boiled
- 1 onion, studded with 3 cloves
- 2 egg yolks
- 2 tbsp heavy cream
- 1 lemon, juiced
Method
- 1 Place chicken quarters in a saucepan with 3 oz butter and flour. Brown well over heat.
- 2 Add stock, bacon, ham, boiled mushrooms, and clove-studded onion. Simmer until chicken is cooked.
- 3 Remove chicken. Skim grease from sauce, then strain through a sieve back into the pan.
- 4 Whisk egg yolks and cream into the hot sauce. Stir gently to thicken without curdling.
- 5 Stir in lemon juice. Pour sauce over the chicken and serve immediately.
