Chicken Taco With Peppers And Onions

Ingredients

  • 1/2 lb chicken breasts, thawed, skin and bone removed
  • 1 tsp vegetable oil
  • 1/4 tsp garlic, finely chopped
  • 1/4 tsp salt
  • 2/3 tsp black pepper
  • 1 tbsp taco seasoning or chili powder (optional)
  • 1 green pepper, sliced
  • 1 medium onion, sliced
  • 4 soft 6-inch tortillas
  • 1/4 head Romaine lettuce, sliced thin
  • 1/4 cup tomatoes, diced
  • 4 tsp fresh tomato salsa
  • 1 tbsp parsley or cilantro, chopped (optional)

Method

  1. 1 In a large bowl, mix chicken, oil, garlic, salt, pepper, and taco seasoning if using. Cover and refrigerate for 30 minutes.
  2. 2 While chicken marinates, cook sliced green pepper and onion in a skillet over medium heat for about 12 minutes until tender.
  3. 3 Cook the marinated chicken in a skillet over medium heat for 10-15 minutes per side until cooked through. Let rest for 5 minutes, then cut into strips.
  4. 4 Warm tortillas. Assemble tacos by placing chicken strips on tortillas, followed by peppers, onions, lettuce, diced tomatoes, salsa, and herbs.
