Chicken Taco With Peppers And Onions
Ingredients
- 1/2 lb chicken breasts, thawed, skin and bone removed
- 1 tsp vegetable oil
- 1/4 tsp garlic, finely chopped
- 1/4 tsp salt
- 2/3 tsp black pepper
- 1 tbsp taco seasoning or chili powder (optional)
- 1 green pepper, sliced
- 1 medium onion, sliced
- 4 soft 6-inch tortillas
- 1/4 head Romaine lettuce, sliced thin
- 1/4 cup tomatoes, diced
- 4 tsp fresh tomato salsa
- 1 tbsp parsley or cilantro, chopped (optional)
Method
- 1 In a large bowl, mix chicken, oil, garlic, salt, pepper, and taco seasoning if using. Cover and refrigerate for 30 minutes.
- 2 While chicken marinates, cook sliced green pepper and onion in a skillet over medium heat for about 12 minutes until tender.
- 3 Cook the marinated chicken in a skillet over medium heat for 10-15 minutes per side until cooked through. Let rest for 5 minutes, then cut into strips.
- 4 Warm tortillas. Assemble tacos by placing chicken strips on tortillas, followed by peppers, onions, lettuce, diced tomatoes, salsa, and herbs.
