Chicken Stew With Mushrooms And Tomatoes
Ingredients
- 1 chicken, cleaned and cut up
- butter
- 1 onion, sliced
- 1 carrot
- salt and pepper
- flour
- 3 cups stock or water
- 1 cup canned tomatoes
- 1 can mushrooms, cut in pieces
- minced parsley
Method
- 1 Clean and cut up the chicken. Brown in butter with a sliced onion and a carrot.
- 2 Season with salt and pepper, dredge with flour, add three cupfuls of stock or water, and cook until the sauce thickens, stirring constantly.
- 3 Add a cupful of canned tomatoes and simmer until the chicken is done.
- 4 Add a can of mushrooms cut in pieces, and a little minced parsley. Heat thoroughly and serve.
