Chicken Stew Thickened With Egg Yolks

Ingredients

  • 1 cold boiled chicken, meat cut into small pieces
  • 1 pint water
  • 1 bouquet garni
  • Salt and white pepper to taste
  • 3-4 peeled mushrooms, finely minced
  • 2 egg yolks
  • Lemon juice

Method

  1. 1 Stew the chicken bones in one pint of water with a bouquet garni, salt, and white pepper.
  2. 2 Strain the stock and return it to the pot. Add the minced mushrooms and cook until tender.
  3. 3 Add the chicken pieces to the sauce and warm through.
  4. 4 Thicken the sauce by stirring in the egg yolks. Add lemon juice to taste and serve hot.
