Chicken Stew Thickened With Egg Yolks
Ingredients
- 1 cold boiled chicken, meat cut into small pieces
- 1 pint water
- 1 bouquet garni
- Salt and white pepper to taste
- 3-4 peeled mushrooms, finely minced
- 2 egg yolks
- Lemon juice
Method
- 1 Stew the chicken bones in one pint of water with a bouquet garni, salt, and white pepper.
- 2 Strain the stock and return it to the pot. Add the minced mushrooms and cook until tender.
- 3 Add the chicken pieces to the sauce and warm through.
- 4 Thicken the sauce by stirring in the egg yolks. Add lemon juice to taste and serve hot.
