Chicken Spinach And Cannellini Bean Pasta
Ingredients
- 16 ounces whole wheat pasta
- 1 tablespoon vegetable oil
- 1/2 onion, chopped
- 3 cloves garlic, chopped
- 2 cups cooked chicken cubes (or 3 chicken sausages, chopped)
- 6 cups spinach, chopped (or 1 bunch Swiss chard)
- 1 can cannellini beans, no salt added (15.5 ounces, rinsed and drained)
- 2 cups chicken broth, low-sodium (or vegetable broth)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese (optional)
Method
- 1 Cook pasta according to package directions and drain.
- 2 Heat oil in a large pan over medium heat. Add onion and cook for 5 minutes.
- 3 Add garlic and cook for 1 minute more.
- 4 Stir in chicken and cook until heated through.
- 5 Add spinach, beans, broth, and Italian seasoning.
- 6 Add cooked pasta and stir to combine. Cook for 5 minutes until heated through.
- 7 Season with salt and pepper to taste. Garnish with Parmesan cheese before serving.
