Chicken Spinach And Cannellini Bean Pasta

Ingredients

  • 16 ounces whole wheat pasta
  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 3 cloves garlic, chopped
  • 2 cups cooked chicken cubes (or 3 chicken sausages, chopped)
  • 6 cups spinach, chopped (or 1 bunch Swiss chard)
  • 1 can cannellini beans, no salt added (15.5 ounces, rinsed and drained)
  • 2 cups chicken broth, low-sodium (or vegetable broth)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)

Method

  1. 1 Cook pasta according to package directions and drain.
  2. 2 Heat oil in a large pan over medium heat. Add onion and cook for 5 minutes.
  3. 3 Add garlic and cook for 1 minute more.
  4. 4 Stir in chicken and cook until heated through.
  5. 5 Add spinach, beans, broth, and Italian seasoning.
  6. 6 Add cooked pasta and stir to combine. Cook for 5 minutes until heated through.
