Chicken Rice Soup With Mixed Vegetables
Ingredients
- 1 cup chicken broth (low-sodium)
- 1 cup cooked chicken
- 1 3/4 cups uncooked rice
- 1/2 cup fresh chopped vegetables (such as potatoes, carrots, celery, or cabbage)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 tablespoon salt
- parsley (dried)
Method
- 1 Place cooked chicken in a large saucepan.
- 2 Add broth and uncooked rice. Cover and bring to a boil.
- 3 Cover, reduce heat to low, and simmer for 15 minutes.
- 4 Add chopped vegetables, onions, and seasonings.
- 5 Simmer for 10 to 15 minutes until vegetables are tender.
