Chicken Rice Salad With Ranch Dressing

Ingredients

  • 1 cup brown or white rice, cooked
  • 2 teaspoons dried parsley (or 2 tablespoons fresh, finely chopped)
  • 1/2 teaspoon ground black pepper
  • 1 clove garlic, finely chopped
  • 1 tablespoon fat-free Ranch dressing
  • 2 tablespoons fat-free mayonnaise
  • 1 cup apple or cantaloupe, cut into chunks
  • 1/3 cup grape halves, cut into chunks
  • 1/2 cup celery, chopped
  • 1 1/4 cups cooked chicken, cut into bite-size pieces
  • 6 lettuce leaves

Method

  1. 1 Wash hands and work area. Cook rice according to package directions without salt, then chill.
  2. 2 In a serving bowl, mix parsley, black pepper, garlic, Ranch dressing, and mayonnaise together.
  3. 3 Add cooled rice, apple, grapes, celery, and chicken to the bowl. Stir gently to combine.
  4. 4 Serve cold on a bed of clean lettuce leaves. Cover and refrigerate leftovers within 2 hours.
