Chicken Ramen Noodle Salad
Ingredients
- 1 package Ramen noodles (any flavor)
- 16 cups cabbage (shredded or cabbage salad mix)
- 1/4 cup scallions (minced)
- 1/2 cup bell pepper (red or green, chopped)
- 2 chicken breasts (cooked, chilled, cut into cubes)
- 1/2 cup peanuts (dry roasted, unsalted)
- 1 teaspoon sugar
- 1 tablespoon olive oil
- 1/4 cup vinegar (rice or white wine)
- 1 packet Ramen noodle flavor seasoning
Method
- 1 Wash hands. Rinse shredded cabbage and drain well. Break up the ramen noodles into small pieces and set aside.
- 2 In a small bowl, whisk together sugar, olive oil, vinegar, and the ramen flavor packet until well combined.
- 3 In a large bowl, combine the cabbage, scallions, bell pepper, peanuts, and cubed chicken.
- 4 Pour the dressing over the salad and toss to combine evenly.
- 5 Sprinkle the broken ramen noodles on top. Serve cold.
