Chicken Ramen Noodle Salad

Ingredients

  • 1 package Ramen noodles (any flavor)
  • 16 cups cabbage (shredded or cabbage salad mix)
  • 1/4 cup scallions (minced)
  • 1/2 cup bell pepper (red or green, chopped)
  • 2 chicken breasts (cooked, chilled, cut into cubes)
  • 1/2 cup peanuts (dry roasted, unsalted)
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1/4 cup vinegar (rice or white wine)
  • 1 packet Ramen noodle flavor seasoning

Method

  1. 1 Wash hands. Rinse shredded cabbage and drain well. Break up the ramen noodles into small pieces and set aside.
  2. 2 In a small bowl, whisk together sugar, olive oil, vinegar, and the ramen flavor packet until well combined.
  3. 3 In a large bowl, combine the cabbage, scallions, bell pepper, peanuts, and cubed chicken.
  4. 4 Pour the dressing over the salad and toss to combine evenly.
  5. 5 Sprinkle the broken ramen noodles on top. Serve cold.
