Ingredients

  • 2 egg yolks, hard-boiled
  • 1 tsp cold water
  • 1 tsp mustard
  • 2 tbsp salad oil
  • 1 tsp chopped parsley
  • 1 clove shallot, chopped fine
  • a little tarragon, chopped fine
  • 3 tbsp vinegar
  • 1 tbsp cream
  • cooked chicken or lobster, cut into small thick pieces
  • lettuce quarters
  • hard-boiled eggs, quartered

Method

  1. 1 Mash the hard-boiled egg yolks with 1 tsp cold water until very fine.
  2. 2 Mix in mustard and salad oil until well combined.
  3. 3 Stir in chopped parsley, shallot, and tarragon.
  4. 4 Add vinegar and cream, mixing thoroughly.
  5. 5 Arrange chicken or lobster, lettuce, and egg quarters in a dish.
  6. 6 Pour the remoulade sauce over the salad and serve.
