Chicken Or Lobster Salad With Remoulade Sauce
Ingredients
- 2 egg yolks, hard-boiled
- 1 tsp cold water
- 1 tsp mustard
- 2 tbsp salad oil
- 1 tsp chopped parsley
- 1 clove shallot, chopped fine
- a little tarragon, chopped fine
- 3 tbsp vinegar
- 1 tbsp cream
- cooked chicken or lobster, cut into small thick pieces
- lettuce quarters
- hard-boiled eggs, quartered
Method
- 1 Mash the hard-boiled egg yolks with 1 tsp cold water until very fine.
- 2 Mix in mustard and salad oil until well combined.
- 3 Stir in chopped parsley, shallot, and tarragon.
- 4 Add vinegar and cream, mixing thoroughly.
- 5 Arrange chicken or lobster, lettuce, and egg quarters in a dish.
- 6 Pour the remoulade sauce over the salad and serve.
