Chicken Okra Gumbo With Sassafras

Ingredients

  • 1 chicken, cut into pieces
  • All-purpose flour, for coating
  • 4 slices salt pork
  • 1 onion, sliced
  • 4 quarts hot water
  • 2 slices boiled ham
  • 2 quarts sliced okra
  • 1/2 can tomatoes
  • 1 red pepper pod
  • Salt and pepper to taste
  • 1 teaspoon sassafras powder

Method

  1. 1 Roll chicken pieces in flour. In a pot, sauté chicken with salt pork and sliced onion until lightly browned.
  2. 2 Add 4 quarts of hot water. Simmer until the chicken is nearly cooked through.
  3. 3 Stir in boiled ham, sliced okra, tomatoes, and red pepper. Cook until all ingredients are tender.
  4. 4 Season with salt and pepper. Just before serving, stir in sassafras powder.
