Chicken Okra Gumbo With Sassafras
Ingredients
- 1 chicken, cut into pieces
- All-purpose flour, for coating
- 4 slices salt pork
- 1 onion, sliced
- 4 quarts hot water
- 2 slices boiled ham
- 2 quarts sliced okra
- 1/2 can tomatoes
- 1 red pepper pod
- Salt and pepper to taste
- 1 teaspoon sassafras powder
Method
- 1 Roll chicken pieces in flour. In a pot, sauté chicken with salt pork and sliced onion until lightly browned.
- 2 Add 4 quarts of hot water. Simmer until the chicken is nearly cooked through.
- 3 Stir in boiled ham, sliced okra, tomatoes, and red pepper. Cook until all ingredients are tender.
- 4 Season with salt and pepper. Just before serving, stir in sassafras powder.
