Chicken Okra Gumbo With Lima Beans
Ingredients
- 2 handfuls young okra, sliced thin
- 2 onions, chopped fine
- 1 gallon water
- Salt and pepper to taste
- 1 handful Lima beans
- 3 young chickens, cleaned and cut into small pieces
- 1 fowl or knuckle of veal
- 1 bit of boiled bacon or pork
- 6 tomatoes, peeled
- 1 tbsp butter
- 1 tbsp flour
- Rice, for serving
Method
- 1 Wash and slice the okra thinly. Chop the onions finely. Place the okra, onions, and water in a large pot or earthenware vessel.
- 2 Season with salt and pepper. Keep the soup at a steady simmer, ensuring it does not boil, for several hours.
- 3 Add the Lima beans, chicken pieces, fowl or veal, and boiled bacon or pork to the pot.
- 4 Add the peeled tomatoes. Continue simmering until the meat is tender and the soup is nearly done.
- 5 Thicken the soup by mixing butter and flour into a paste, then stirring it into the pot. Serve hot with boiled rice.
