Chicken Okra Gumbo With Corn And Potatoes
Ingredients
- 1 chicken, cut up
- Ham or bacon fat
- 3 quarts cold water
- Corn from 3 large ears or 1 can
- 2 tomatoes, sliced
- 2 potatoes, diced
- 6 okra pods
- ½ cup cold boiled ham, chopped fine
Method
- 1 Cut up a chicken and fry brown in ham or bacon fat.
- 2 Cover with three quarts of cold water and boil until the chicken is tender.
- 3 Add corn, sliced tomatoes, diced potatoes, okra pods, and chopped cold boiled ham.
- 4 Boil until the chicken falls apart, remove the bones, and serve.
