Chicken Okra Gumbo With Corn And Potatoes

Ingredients

  • 1 chicken, cut up
  • Ham or bacon fat
  • 3 quarts cold water
  • Corn from 3 large ears or 1 can
  • 2 tomatoes, sliced
  • 2 potatoes, diced
  • 6 okra pods
  • ½ cup cold boiled ham, chopped fine

Method

  1. 1 Cut up a chicken and fry brown in ham or bacon fat.
  2. 2 Cover with three quarts of cold water and boil until the chicken is tender.
  3. 3 Add corn, sliced tomatoes, diced potatoes, okra pods, and chopped cold boiled ham.
  4. 4 Boil until the chicken falls apart, remove the bones, and serve.
